Low Carb Crockpot Meals

Ever feel like there’s just not enough time to make dinner? Looking for an easy way to deliver a nutritious meal to your family?

Skip the quick, carb-loaded, fat-heavy, high-calorie fast food meal choices, and instead, opt for a low carb crockpot meal that cooks all day and is ready to serve when you get home.

This type of dinner will require some thought in advance, like getting the ingredients the day before, or weekend before. Your prep time (like chopping veggies or measuring ingredients) could be completed the night before or on weekends, and in the morning, dump it all in the crock pot before you leave.

Balsamic Chicken

Ingredients:

4-6 boneless, skinless, chicken breasts
2 14.5 oz can diced tomatoes
1 medium onion thinly sliced
4 garlic cloves
1/2 cup balsamic vinegar
1 Tbsp olive oil
1 tsp each: dried oregano, basil, & rosemary
1/2 tsp thyme
ground black pepper and salt to taste

Directions:

Pour the olive oil on bottom of slow cooker, add chicken breasts, salt and pepper each breast, put sliced onion on top of chicken then put in all the dried herbs and garlic cloves. Pour in vinegar and top with tomatoes. Cook on high 4 hours.

Serve over one cup of pre-cooked spaghetti squash (only adds another 5 grams of carbs).

Yields: 10 Cups • Serving size: 1 Cup

Spaghetti Squash & Turkey Meatballs

Ingredients:

1 spaghetti squash
1 24-ounce can tomato sauce
½ pound lean ground turkey
4 whole cloves of garlic
2 Tbsp olive oil
2 tsp Italian seasoning

Directions:

In a 6-quart crock pot dump the tomato sauce, olive oil, garlic and Italian seasonings, stir well. Cut spaghetti squash in half, scoop out seeds and put into crockpot face down. Roll your ground turkey into 24 one-inch diameter meatballs and place them in the sauce around the squash. Cook on high for 3 hours or low for 5 hours. Use a large fork to scoop out the spaghetti squash and serve.
