Skip the quick, carb-loaded, fat-heavy, high-calorie fast food meal choices, and instead, opt for a low-carb crockpot meal that cooks all day and is ready to serve when you get home. This type of dinner will require some thought in advance, like getting the ingredients the day before or the weekend before. Your prep time (like chopping veggies or measuring ingredients) could be completed the night before or on weekends, and in the morning, dump it all in the crock pot before you leave. Like the idea of coming home to the smell of a home-cooked meal that is ready to serve? Try one of these low-carb crockpot meals tonight!

Balsamic Chicken

Ingredients:4-6 boneless, skinless chicken breasts2 14.5 oz can diced tomatoes1 medium onion thinly sliced4 garlic cloves1/2 cup balsamic vinegar1 Tbsp olive oil1 tsp each: dried oregano, basil, & rosemary1/2 tsp thyme ground black pepper and salt to taste Directions: Pour the olive oil on the bottom of the slow cooker, add chicken breasts, salt, and pepper each breast, put sliced onion on top of chicken then put in all the dried herbs and garlic cloves. Pour in vinegar and top with tomatoes. Cook on high for 4 hours. Serve over one cup of pre-cooked spaghetti squash (only add another 5 grams of carbs). Yields: 10 Cups Serving size: 1 CupCalories: 190 Fat: 6g Net Carbs: 4 g Protein: 26 g

Spaghetti Squash & Turkey Meatballs

Ingredients:1 spaghetti squash1 24-ounce can tomato sauce pound lean ground turkey 4 whole cloves of garlic2 Tbsp olive oil2 tsp Italian seasoningDirections: In a 6-quart crock pot, dump the tomato sauce, olive oil, garlic, and Italian seasonings and stir well. Cut spaghetti squash in half, scoop out seeds, and put into crockpot face down. Roll your ground turkey into 24 one-inch diameter meatballs and place them in the sauce around the squash. Cook on high for 3 hours or low for 5 hours. Use a large fork to scoop out the spaghetti squash and serve. Yields: 4 Servings Serving Size: 1 Cup of Spaghetti Squash & 6 MeatballsCalories: 113 Fat: 2 g Net Carbs: 5 g Protein: 6 g
